What It Tastes Like
Fresh + vertical (in the best way). You’ll get Granny Smith apple and pear up front, a lift of citrus zest (think grapefruit/yuzu), and a subtle fennel-herbal edge that keeps it feeling sharp and modern.
There’s also a little pastry/brioche note from time on the lees — not heavy, just enough to make it feel polished.
Finish: saline, stony, and long. Like sea air + limestone.
