The Dibon Rosado Cava feels like the kind of bottle that does exactly what you want sparkling rosé to do — bright red fruit, lively bubbles, and enough leesy depth to make it feel like more than just a quick aperitif. A wine with raspberry and blackcurrant aromas, small persistent bubbles, and a palate that is full in the mouth with a long finish and great elegance.
This is part of Pinord’s long-running Dibon Cava line from the heart of Penedès/Catalonia, made from Garnacha, with fruit from 60+ year old vines on limestone soils. The wine is produced by the traditional method, with natural yeasts and 12 to 18 months of aging before disgorgement.

What makes this wine work is the balance between red-fruit charm and proper sparkling-wine structure. The raspberry and blackcurrant notes make it instantly friendly, but the lees aging gives it a little more shape and a subtle tertiary edge.

Winemaking:
